Do Not Discard Your Sourdough: Vegan Pancakes Recipe

Your sourdough starter needs to be refreshed at least once a week and sometimes you do not have time to make pizza, shocking but true!

One way to recycle your discarded sourdough starter is to make pancakes (this recipe works well for making waffles also).

Here following is a plant based - vegan recipe that I am sure you will enjoy:

Mix together and let rest for 12 to 16 hours room temperature the following ingredients:

  • gr. 200 Discarded Sourdough
  • gr. 250 All Purpose Flour (Optional: gr.200 White Flour+gr.50 Whole Wheat Flour)
  • gr. 300 Oat Milk
  • gr. 40 Coconut Milk Powder
  • gr. 25 of one of the following: Maple syrup, Brown sugar, etc.
 
Once the batter has rested over night, it will be ready to be combined with the following mix of:
  • Corresponding replacement of one egg using 1 Tbsp ground of Flaxseed, other options, go to Vegan Egg Substitutes.
  • 2 tsp Vanilla
  • 1 tsp Salt
  • 1 tsp Baking Soda

In the meantime get your pan or cast iron skillet ready, wait for about a minute or two before starting to make pancakes.
